4/27/12 Eats

Even though I'm borderline on the gestational diabetes thing (I barely failed the 1 hour and am retaking the 3 hour on Wednesday), I still want to work on eating healthier and limiting my sugar intake. Reading about the effects that high blood sugar levels has on the babies makes me what to do whatever I can to make things easier for them now and throughout their lives. Children born to mothers with gestational diabetes are more likely to be obese and develop type-2 diabetes. It's no secret that I struggled to get my weight in a healthy place and I'll do anything I can to prevent my children from having these issues. I'm going to be tracking what I eat so that 1) I am more accountable for the choices I make and 2) If I do fail, I'll have a diary to show the nutritionist of what foods I've been consuming that cause my blood sugar to be high.

Now last night was a rough night for me and my stomach. I didn't sleep well and made a few bad choices today. These are all things I need to work on!

Breakfast
Bowl of Special K with Skim Milk

Snack
2 small chocolate candies

Lunch
Lentils with salmon, black bean and corn salsa, spinach, and a dallop of plain greek yogurt
Individual sized brie cheese and 6 small pita chips

Snack
Vanilla greek yogurt with almonds and 10 dark chocolate chips

Dinner
This recipe from Pioneer Woman: Brown rice (sub for white) pasta with tomatoes, spinach, and onions in a white wine sauce. The recipe doesn't call for chicken but I'll probably throw some in there because I need the protein.

This found on Pinterest: Prosciutto, Asparagus, and Parmesan Spaghetti. I'll be subbing a whole grain spaghetti in.
